Sautéed Brussels Sprouts

1/2 lbs bacon (substitute veg oil for vegetarian)

1 small onion, cut into half moons

2 lbs Brussels sprouts, trimmed and halved  (can substitute shredded cabbage)

1/2 cup cashews (or your favorite nut)

1/2 cup dried fruit (raisins, apples, cranberries, etc)

Salt and Pepper

1/2 cup broth or water

1 tsp lemon juice

 

Cut bacon into 1 inch strips and cook with onions.  Add broth and Brussels sprouts.  Saute together until the sprouts are soft and lightly browned.  Add nuts and fruit and mix until they are thoroughly warmed.  Add lemon juice right before serving.
